Deep-fried root vegetables

Servings 4


  • 500
    root vegetables such as sweet potatoes or beetroot
  • oil for deep-frying
  • a dip of your choice


Scrape the vegetables and slice using a vegetable peeler.
Heat oil in a deep saucepan and deep-fry a few slices at a time until golden brown and crisp.
Drain on paper towels and cool.
Serve as is; with tuna burgers with salsa (see Tuna burgers with salsa recipe) or with a dip.
