Place 100 ml white sugar in a saucepan and add 375 ml (1 1/2 c) water, 2 whole cinnamon sticks, 2 whole star aniseed, 1 whole clove and two strips fresh orange rind. Heat slowly until the sugar has dissolved. Simmer for about 7 minutes until the syrup begins to thicken slightly. Halve 8-10 soft dry dates, add to the syrup and simmer slowly for another 7 minutes until the dates are soft and glossy and the syrup has thickened. Cool the dates in the syrup and set aside. Reheat just before serving. Serve spooned on top of Coconut tart slices.
