Ingredients (11)

DOUGH
500.00 g flour — cake
3.00 ml Baking powder
salt — pinch
125.00 g butter
1.00 eggs — whisked
FILLING
125.00 g dates — pitted
2.00 ml Bicarbonate of soda
2.00 ml mixed spice — ground
65.00 ml milk
1.00 eggs — whisked
5.00 ml water

Method:

Preheat the oven to 180 °C and line a baking sheet with baking paper.
Sift the dry ingredients together and rub in the butter until the mixture resembles coarse mealie meal.
Add the egg and mix to form a stiff dough. Knead lightly, cover and leave to rest for 15 minutes.
Meanwhile prepare the filling. Place the dates, bicarbonate of soda, spices and milk in a small saucepan and boil until the dates are soft. Cool and stir in the whisked egg.
Roll out the dough into a large square and spread the filling over the entire surface. Roll into a sausage shape, brush the long side with water and press down lightly. Brush the top of the roll with milk.
Cut into 1,5 cm slices, arrange on the prepared baking sheet and bake for 10 to 15 minutes until golden.
Cool and store in an airtight container.
