Ingredients (11)

150.00 g dates — finely chopped
250.00 ml water — boiled
5.00 ml Bicarbonate of soda
60.00 ml oil
100.00 g sugar
100.00 ml golden syrup
2.00 eggs — large, beaten
300.00 g flour — cake
5.00 ml Baking powder
5.00 ml cinnamon — ground
3.00 ml salt

Method:

Preheat the oven to 180 ºC (350 ºF). Spray a 23 x 13 x 7 cm loaf tin with non-stick spray.
Mix the dates, boiling water and bicarbonate of soda together and cool slightly. Add the oil, sugar and golden syrup, blending well. Cool completely before adding the beaten eggs. Mix well.
Sift the remaining ingredients together in a large mixing bowl. Make a hollow in the centre and add the date mixture. Mix thoroughly.
Turn into the prepared loaf tin and bake for about 1 hour or until a testing skewer comes out clean when inserted into the centre of the loaf. Cool slightly before turning out onto a wire rack to cool completely.
Serve with butter.
Makes a medium-sized loaf.
