Date dainties

  • 250
    hard margarine
  • 180
    brown sugar
  • 250
    chopped dates
  • 2
    eggs, beaten
  • 5
    mixed spice
  • 250
    chopped pecans or walnuts
  • 2
    packets crushed Marie biscuits
  • coconut


1. Melt the margarine, add sugar and chopped dates, and cook until sugar has dissolved. Remove from heat and cool. 2. Add beaten eggs, return to low heat and cook for about 3 minutes. Remove from heat. 3. Add mixed spice, chopped nuts and crushed biscuits. If mixture is very sticky/wet, add extra biscuits. 4. Press into a greased tray and leave to set overnight in the fridge. Cut into squares. Cut each square diagonally into 2 triangles and roll in coconut. Store in the fridge.
