Date and banana pudding

Time 10 minutes, plus standing time


  • 4
    bananas, sliced
  • 250
    fresh dates, pitted and sliced
  • 15
    castor sugar
  • 250
  • 50
    pecan nuts, chopped


Alternate layers of banana and dates in a serving dish.
Mix the sugar and cream, but do not whip. Pour over the bananas and dates, and sprinkle with nuts.
Chill for a few hours to allow the cream to soak into the fruit.
Serve chilled with vanilla ice cream.
