Dark chocolate ganache with fresh raspberries

  • 300
  • 300
    the best quality dark chocolate you can afford
  • 1
    punnet of fresh raspberries

Roughly chop the chocolate.
Heat the cream and when it is just starting to bubble, remove it from teh heat and add the chocolate.
Let it melt into the cream and stir lightly to combine.
Place it into a bowl, let it cool and then place it into the fridge.
When it is set (about an hour) remove it.
Dip a spoon into hot water and scoop out large spoonfuls of the ganache.
Place on a plate with the fresh strawberries.
Dust lightly with icing sugar for fun.
