    fennel seeds

    fenugreek seeds

    dried red chillies
  • 5
    curry leaves
  • GROUND SPICES
  • 15
    ml
    chilli powder
  • 15
    ml
    turmeric
  • 3
    ml
    salt
  • WHOLE SPICES
 

Method

 
1. Dry-roast whole spices in a heavy-based pan for 8 to 10 minutes, shaking the pan from side to side until the spices begin to darken and release a rich aroma. 2. Place the dry-roasted spices in a coffee grinder or use a pestle and mortar to grind to a fine powder. Allow to cool slightly. Add remaining ground spices and store in an airtight container.
