2.00 kg fish — line fish
1.00 lemon — zest only
5.00 ml lemongrass — fresh, chopped
2.00 garlic — cloves, crushed
5.00 ml coriander — ground
10.00 ml curry powder
2.00 ml salt
60.00 ml fresh chillies — 573

Method:

Place fish fillets in a shallow ovenproof dish or on a foil tray.
Blend lemon peel, lemon grass, garlic, coriander, curry powder and salt. Mix with olive oil and brush lavishly over fish fillets.
Bake, uncovered, at 180 ºC for 10 to 15 minutes, then place directly under the grill and cook until crusted and golden brown, 5 to 10 minutes extra.
