Curried pumpkin

  • 1
    large onion, sliced
  • 2
    cloves garlic, crushed
  • 2
    whole stick cinnamon
  • 2
    chillies, seeded and sliced into rings (optional)

  • 15
    mild curry powder
  • 5
    ground cumin
  • 2
    flat white pumpkin, peeled and sliced
  • sugar to taste, about 100 ml
  • chopped parsley

Sauté the onion along with the garlic, cinnamon and chilli in a little oil till the onion is soft. Add the seasonings and stir fry for another minute, taking care that the mixture does not burn. Add the pumpkin slices and a little water. Season with salt and simmer till the pumpkin is soft, but not mushy. Add sugar to taste and bring to the boil once more. Serve with a sprinkling of chopped parsley. Serves 4.
