Ingredients (7)

30.00 ml margarine
2.00 garlic — cloves, crushed
5.00 ml fresh ginger — grated
5.00 ml curry powder — mild
125.00 ml milk
250.00 g mussels — tinned in brine, drained
50.00 ml cream — fresh

Method:

Melt the margarine in a small heavy-based saucepan. Add the garlic and ginger and stir-fry lightly. Add the curry powder and stir-fry for a few seconds. Add enough milk to cover the base of the saucepan. Stir until mixed. Add the mussels and cream and heat through.
Serve with rice or fresh bread and a salad.
Serves 1-2.
