Curried lentil and pecan nut patties

Ingredients (10)

250.00 g lentils — red
50.00 g pecan nuts — chopped
1.00 onions — large, roughly chopped
1.00 eggs — jumbo
30.00 ml curry powder
2.00 ml brown sugar
3.00 garlic — cloves
30.00 ml fresh chillies — 573
250.00 ml breadcrumbs — dried
oil — for frying

Method:

Drain lentils and just cover with hot water.
Cook in a microwave on full power for 25 minutes.
The water will be been absorbed and the resultant ‘porridge’ will be yellowish and crumbly. (Alternatively, it can be cooked in a pot until the desired texture is reached).
Add the chopped pecan nuts.
Blend remaining ingredients (except the breadcrumbs) in blender until smooth and stir into lentil/nut mixture and mix well.
Shape into patties, roll in breadcrumbs and fry in oil until brown and crispy.
Makes 12 patties.
