Ingredients (11)

2.00 bread — sliced white, spread chutney
1.00 onion — finely chopped
1.00 tomatoes — peeled, finely chopped
410.00 g curried vegetables
415.00 g curried fish
25.00 ml chutney
2.00 eggs — extra-large
60.00 ml milk
salt and freshly ground black pepper
2.00 bananas
30.00 ml coconut

Method:

Preheat the oven to 180ºC (350ºF). Spray a small, ovenproof dish with non-stick spray.
Arrange the white bread in the bottom of the prepared dish.
Sauté the onion in a little oil until soft. Add the tomato and simmer until a nice thick puree is formed. Add the curried vegetables, curried fish and chutney and spoon over the bread.
Whisk the eggs and milk together, season with salt and pepper and pour over the fish mixture. Slice the bananas and arrange the slices on top of the fish mixture. Sprinkle with coconut and bake for 40 minutes or until set.
Serve with rice and a salad.
Serves 4.
