Ingredients (10)

SAUCE
15.00 ml curry powder — mild
2.00 ml salt
5.00 ml cornflour
15.00 ml brown sugar
15.00 ml vinegar
200.00 ml water
750.00 g hake — skinned
salt and freshly ground black pepper — to taste
flour — cake
oil — for frying

Method:

Combine the dry ingredients for the sauce, add the remaining sauce ingredients and heat while stirring until the sauce comes to the boil and thickens slightly. Cool.
Season the fish with salt and pepper and dip in the curry sauce. Roll in cake flour and deep-fry until golden brown and cooked.
Layer the fish and sauce in a dish and serve.
