Curried eggs with soya sauce

Ingredients (7)

1.00 onion — finely chopped
oil
5.00 ml turmeric
30.00 ml jam — apricot
200.00 g savoury soya mince — curried
sea salt and freshly ground black pepper
4.00 eggs — hard-boiled

Method:

Sauté the onion in a little oil until soft and glassy. Add the turmeric and apricot jam and stir-fry for about one minuter, taking care not to burn the mixture. Add the soya mince and the recommended quantity of water, usually 800 ml boiling water. Simmer slowly until soft and most of the water has been absorbed. Season to taste with salt and pepper. Halve the eggs and arrange on top. Serve with rice.
Serves 4.
