Ingredients (9)

1.00 kg cucumber — English
500.00 g onion
250.00 ml water
5.00 ml salt
250.00 ml sugar
500.00 ml vinegar — white garpe
30.00 ml curry powder
10.00 ml mustard — powder
30.00 ml cornflour — slurry

Method:

Slice the cucumbers and onions thinly and halve. Bring the water to the boil and cook the cucumbers and onions for 10 minutes.
Add the salt and sugar and heat until the sugar has dissolved. Add the remaining ingredients and boil until the mixture thickens.
Spoon the hot mixture into clean, sterilised jars.
Makes 1,75 litres.
