Curried bean salad

  • 250
    dried beans, soaked overnight in water
  • salt

    onion, finely chopped
  • 1
    clove garlic, crushed
  • oil
  • 2
    curry powder
  • 10

    mustard powder
  • 100
  • salt and black pepper to taste
  • 2
    eggs, hard-boiled


Drain the beans, cover with fresh cold water and boil until soft. Season with salt towards the end of cooking time, otherwise the beans will be tough. Drain and cool. Sauté the onion and garlic in a little oil until soft and glossy. Add the curry powder and stir-fry for about another minute. Remove from the heat and add the sugar and mustard powder. Add the mayonnaise and season to taste with salt and black pepper. Mix with the beans and transfer to a bowl. Quarter the eggs and arrange on the beans. Sprinkle with a little chopped parsley. Chill until needed. Serves 3.
