Ingredients (17)

30.00 ml sunflower oil
3.00 onions — large, finely chopped
3.00 garlic — cloves, crushed
30.00 ml fresh ginger — finely grated
10.00 ml salt
10.00 ml mustard — powder
5.00 ml turmeric
5.00 ml cumin — ground
2.00 ml cardamom — ground
2.00 ml allspice — ground
1.00 ml cayenne pepper
5.00 Granny Smith apples — peeled, chopeped
1.00 Litres water
2.00 cinnamon — stick
30.00 ml lemon juice — fresh
45.00 ml honey — or brown sugar
0.00 almonds — flaked, toasted

Method:

Heat the oil in a large saucepan, add the onions, garlic and salt and sauté over medium heat for five minutes or until the onions become soft.
Add the spices and sauté over medium heat for another five minutes.
Add the apples, water, cinnamon sticks and lemon juice and bring to the boil.
Reduce the heat, cover and simmer for about 10 minutes or until the apples are very soft. Remove from the heat and discard the cinnamon sticks.
Pour the soup into a food processor and blitz until smooth.
Add the honey or brown sugar (if using) and more salt if necessary.
Return to the saucepan and heat through if serving hot.
Garnish with toasted almond flakes or a scoop of plain yoghurt and chopped chives.
