Cucumber sandwiches with mustard butter

  • 100
  • wholegrain mustard (Pommery) to taste
  • salt and milled black pepper to taste
  • 5
    lemon juice
  • 5
    finely chopped parsley
  • 8
    thin slices fresh white bread
  • 1
    English cucumber, very thinly sliced
  • watercress and nasturtiums to garnish


Blend butter with mustard, seasoning, lemon juice and parsley. Spread over bread and trim off crusts. Cover bread slices with paper-thin cucumber slices (use a mandolin slicer). Sandwich two bread slices together and cut into neat triangles Serve on a bed of watercress and garnish with nasturtiums. Makes 16 triangles.
