Crusty fish with mustard

Ingredients (7)

1.00 thick slice bread — broken into pieces
fresh parsley
30.00 ml fresh chillies — 573
1.00 orange — zest only
salt and freshly ground black pepper — to taste
30.00 ml Dijon mustard — or wholegrain mustard
4.00 yellowtail — or hake or cob

Method:

Blend the bread and parsley together in a food processor until fine. Add the oil, orange rind, salt and pepper to taste and process again briefly.
Put the fillets on a baking tray. Spread mustard over each portion. Press an even layer of crumb mixture over each.
Grill under a hot grill or bake in preheated 200 ºC oven for about 6 minutes, depending on thickness, until topping is crisp and fish white.
Serve with a microwaved potato and green salad.
