Crumpets with stewed dried fruit

  • 500
    self-raising flour
  • 5
    bicarbonate of soda
  • pinch salt
  • 500
    plain yoghurt, buttermilk or sour milk
  • 2
    extra-large eggs
  • 30
    melted butter


Sift together the dry ingredients. Beat the yoghurt and eggs together and add the melted butter. Add to the dry ingredients and mix until smooth. Spray a pan with non-stick spray and heat until hot. Drop tablespoonfuls of the batter into the pan and fry until air bubbles form on the surface, turn and fry until golden brown underneath. Serve with Stewed fruit in cinnamon and vanilla sauce. Makes about 35 crumpets.
