Ingredients (10)

50.00 ml butter
1.00 onion — finely chopped
80.00 ml flour — cake
10.00 ml dried mixed herbs
350.00 ml milk
salt and freshly ground black pepper
600.00 g hake — fillets, skinned
100.00 ml breadcrumbs — fresh
100.00 ml cheddar cheese — grated

Method:

Preheat the oven to 180 ºC. Spray a medium-sized ovenproof dish with non-stick spray.
Heat the butter in a heavy-based saucepan. Sauté the onion until soft and translucent. Add the cake flour and herbs, stirring until smooth. Add small quantities of the milk at a time and heat the sauce until it comes to the boil and thickens. Season with salt and black pepper to taste. Arrange the hake fillets in the prepared ovenproof dish. Pour the white sauce on top and sprinkle with breadcrumbs and cheese. Dot with butter. Bake for 30-45 minutes or until the fish flakes easily with a fork. Serve with rice, courgettes and grilled tomatoes.
