Ingredients (15)

2.00 garlic — cloves, crushed
1.00 green chilli — sliced
1.00 onion — small, chopped
30.00 ml fresh chillies — 573
400.00 g tomatoes — chopped
3.00 ml sugar
3.00 ml salt
black pepper — freshly ground
25.00 g fresh coriander
125.00 ml stock — chicken or turkey
15.00 ml tomato purée
400.00 g turkey — shredded
100.00 g tortilla chips
150.00 ml sour cream
25.00 g cheddar cheese — mild, grated

Method:

Microwave the garlic, chilli, onion and olive oil for 1 1/2 minutes on HIGH, to soften the onion.
Add chopped tomatoes, sugar, seasoning and stock to onion mixture, combine well and microwave on HIGH for 1 minute.
Stir in tomato concentrate and shredded meat. Cook on HIGH for a further 5 to 6 minutes.
Drain off excess liquid and adjust seasoning.
Spread tortilla chips on an ovenproof dish. Top with the meat sauce.
Spoon over the cream, sprinkle with cheese and place under the grill for 3 to 4 minutes until golden and bubbling.
