Crispy fried fish fillets

  • SALSA:
  • 1/2
    pineapple, peeled, cored and diced
  • 100
    Peppadews, chopped
  • 3
    spring onions, finely sliced
  • 10
    fresh coriander, roughly chopped
  • juice of ½ a lime
  • FISH:
  • 4
    180g to 200g sustainable fish fillets, skin on
  • sea salt and black pepper
  • olive oil for frying
  • lemon wedges to garnish


Combine salsa ingredients in a bowl and set aside.

Score the skin of the fish; don’t slice too deeply into the fish. Season.
Heat a little oil in a non-stick pan.Fry fish skin-side down for 5 to 6 minutes or until skin is golden and crispy.Turn fish and cook for a further 2 minutes or until cooked through.
To Serve
Arrange fish on serving plates and top with salsa.
