Crisp lettuce salad

  • 1
    Cos lettuce
  • 6
    ripe tomatoes, sliced in wedges
  • 2
    slices bread, diced
  • 30
    olive oil
  • red chilli oil for drizzling (see recipe)


Arrange the lettuce leaves and tomato wedges on a serving platter. Fry the diced bread in the olive oil until browned. Drain on paper towelling and sprinkle over the salad. Sprinkle the salad with chilli oil just before serving. Serves 4-6.
