750.00 g pork — belly
2.00 eggs — beaten
200.00 g breadcrumbs — fresh, brown
1.00 lemon — large, zest only
15.00 ml mustard — powder
5.00 ml salt
2.00 ml freshly ground black pepper

Method:

Remove rib bones with a sharp knife and cut belly into fairly thin slices.
Place beaten egg onto a plate and mix crumbs, lemon peel and seasoning on another. Dip pork slices in egg, shake off excess and coat in breadcrumbs, patting on well.
Lay slices in a single layer in a roasting pan and bake at 200 ºC for 15 minutes. Reduce temperature to 180 ºC and continue to bake for another 45 minutes, turning slices once, halfway through. Pork must be golden brown and crisp.
Drain slices on absorbent paper and serve with vegetables.
