Crêpes Suzette (Pancakes with orange liqueur)

    orange, grated rind and juice

    Grand Marnier or orange liqueur

    readymade pancakes

Heat butter in a saucepan to melt. Add sugar and allow to cook slowly until sugar has melted. Stir in orange rind and juice and half the liqueur. Fold the pancakes into quarters and layer them in the saucepan, spooning sauce over them. Warm remaining liqueur, pour over pancakes and set alight, using a match. When flames die down, arrange pancakes on serving plates, spoon over sauce and serve immediately.
