Ingredients (14)

10.00 ml sunflower oil
5.00 ml sesame oil
15.00 ml curry powder
5.00 ml coriander — ground
5.00 ml cumin — whole seeds
3.00 onions — medium
2.00 garlic — cloves
3.00 potatoes — large
125.00 ml stock — vegetable
125.00 ml coconut milk
125.00 g mushrooms
200.00 g broccoli
410.00 g baked beans — tinned
0.00 popcorn — popped

Method:

Heat oils in a large saucepan. Add curry powder, coriander and cumin seeds and stir for 1 minute.

Add the onion, garlic and potatoes and sauté for 5 minutes. Add the stock and coconut milk and bring to the boil. Simmer for 10 minutes or until potatoes have softened.

Add the mushrooms, broccoli and baked beans and simmer for a further 5 to 10 minutes until the broccoli is tender.

Serve with poppadums or rotis.
