Ingredients (9)

65 ml butter — or margerine
1 spring onions — bunch, finely chopped
10 ml fresh garlic — crushed
250 ml sweetcorn — frozen
125 ml mushrooms — chopped
salt and freshly ground black pepper — to taste
750 ml samp — cooked
125 ml cream
250 ml vegetable stock

Method:

1. Melt butter and sautè spring onions and garlic until soft, add sweetcorn, mushrooms and seasoning.
2. Add cooked samp and cook for 5 minutes,
slowly add cream and stock, stirring
frequently until liquid is absorbed but
samp is still moist.
3. Serve warm with grilled meat and
vegetables in season.
