Creamy chocolate slices

    large eggs, separated

    dark chocolate, grated

    white bread flour

    dark chocolate, broken into pieces

Beat egg whites until stiff. Gently tip into another bowl. Using the whisk, beat the egg yolks and sugar until creamy. Add chocolate and flour to the yolk mixture, then fold in the egg whites. Pour mixture into a greased and lined 23 x 13 cm loaf tin. Bake in preheated 180 °C oven for 25 minutes. Set aside to cool, then slice in half to make two layers. FiILLING: Melt the chocolate and butter together and set aside to cool. Place the drained peaches into a liquidiser and blend until smooth. Whip the cream, until stiff. Fold the puré;ed peaches into the cream. Spread the chocolate over the bottom half of the cooled cake. Top with the peach cream and then the top layer of cake. (Reserve any leftover peach cream for serving.) Chill in the fridge, then serve sliced for afternoon tea or dessert with extra peach cream on the side.
