Ingredients (5)

150.00 g dark chocolate — broken into squares
50.00 ml nescafé strong black coffee
50.00 ml butter
3.00 eggs — seperated
250.00 ml cream — fresh, chilled

Method:

Melt the chocolate and coffee in a glass bowl over a little boiling water or in the microwave oven, stirring continuously. Add the butter and mix until the butter has melted and the mixture has cooled slightly. Beat the egg yolks and mix with a quarter of the chocolate mixture. Add the remaining chocolate mixture and mix. Whip the cream and fold into the chocolate mixture. Beat the egg whites until soft peaks are formed and fold into the chocolate mixture. Pour into small cups or glass ramekins and chill overnight. Decorate with cream rosettes and fresh flowers if desired.
Serves 6-8.
