Ingredients (10)

25.00 ml oil
10.00 ml butter
1.00 onion — finely chopped
8.00 celery stalks — finely chopped
300.00 ml milk
300.00 ml stock — chicken
salt and freshly ground black pepper — to taste
nutmeg — ground
cream
fresh herbs

Method:

Heat the oil and butter and fry the onion and celery over low heat until soft, but not brown. Cover and braise the vegetables until tender. Add half the milk, stock and salt and pepper, Bring to the boil, stirring continually, and simmer for about 25-30 minutes. Allow to cool slightly and process until smooth. Add the remaining milk and heat to just below boiling point before serving. Sprinkle with nutmeg and garnish with cream and herbs.
Serves 4-6.
