Creamy beef stroganoff

  • 10
    olive oil
  • 500
    lean beef strips
  • 1
    onion, chopped
  • 125
    mushrooms, sliced
  • 1
    fresh thyme leaves, stalks removed
  • 50
    tomato paste
  • 1
    beef stock cube dissolved in 1/2 cup boiling water
  • 1
    can Nestlé Ideal Lite Evaporated Milk
  • 15
    corn flour
  • salt and pepper to taste
  • cooked rice or fettucini to serve

Heat oil in a pan, add beef strips, brown evenly and remove from pan.
Add garlic, onion and mushroom to the pan and cook for 2 minutes.
Add paprika, thyme and tomato paste and cook for a further minute.
Return beef strips to the pan.
Combine dissolved stock, IDEAL LITE and corn flour in a jug, add to pan and bring to the boil stirring.  
Season to taste.
Serve with rice or pasta.
