Ingredients (6)

900.00 g potatoes — peeled
3.00 onion — large, sliced into rings
40.00 ml fresh chillies — 573
50.00 g butter
150.00 ml cream
salt and white pepper

Method:

1. Place potatoes in salt water, cover and bring to a simmer for 20 minutes or until tender. Meanwhile put olive oil and onions in a large frying pan and cook over a low heat for 15 to 20 minutes.
2. Drain potatoes, press through a sieve and add butter, cream and seasoning. Pile in a warmed serving dish and top with drained caramelised onions.
