Cream cheese and pistachio spread

    butter, at room temperature
  • 1
    large clove garlic, crushed with a little salt
  • 60
    unsalted pistachio nuts, toasted and finely chopped
  • salt and freshly ground black pepper
  • 60
    chives, finely chopped
  • 1
    French loaf
  • 250
    cream cheese or creamed cottage cheese


Beat the cream cheese, butter, garlic, nuts, salt and freshly ground black pepper together until well blended and smooth. Stir in the chopped chives. Transfer to small serving bowls and cover with cling film. Chill, preferably overnight. Just before serving, garnish with extra chives. Serve with toasted French bread. Makes about 500 ml (2 c) spread.
