Cream cheese and ginger prunes

    fresh orange juice
  • 45

    lemon, peel
  • 16
    pitted prunes
  • full fat cream cheese
  • preserved ginger in syrup
  • almond pieces (optional)
  • lemon and orange peel to decorate


Bring orange juice, brandy, water and peel to boil. Reduce heat and add prunes. Simmer prunes until soft but not mushy (this may be done the night before). Remove prunes from juice and cool. Make a slit in each prune and spoon in a little cream cheese. Remove a knob or two of preserved ginger from syrup and cut into thickish slices. Add a ginger slice and an almond sliver to each prune and chill lightly before serving.
