Crayfish curry

    cooked crayfish, shelled
  • oil for frying
  • 1
    onion, sliced
  • 1
    large clove garlic, crushed
  • 125
    ml
    cream
  • 1
    ml
    mild curry powder
  • 15
    ml
    brandy
 

Method

 
Dice the crayfish. Heat the oil in a pan and sauté the onion and garlic until soft. Add the crayfish and fry for 1 minute. Add the cream, curry and brandy. Simmer until the cream has reduced and thickened. Serve with yellow rice. Serves 2.
