Ingredients (8)

4.00 potatoes — large
30.00 ml vegetable oil
salt
black pepper — freshly ground
60.00 g butter
125.00 g sour cream
2.00 eggs — just the yolks
400.00 g baked beans in tomato sauce — and viennas

Method:

Scrub the potatoes, prick with a fork and brush with vegetable oil.
Bake on a rack in the centre of a preheated 200 ºC oven for about 1 hour.
Cut a ‘lid’ from the top of each potato. Carefully scoop out the flesh, leaving shells about 2 cm thick.
Mash the scooped out potato in a bowl with a fork. Stir in three quarters of the butter and let it melt slowly. Season to taste.
Mix the sour cream and egg yolks and stir into the mash.
Divide the beans and viennas between the potato shells and top with prepared potato.
Arrange the potatoes side by side in a gratin dish.
Dot with remaining butter and bake for 10 to 15 minutes at 200 ºC.
