Cowboy style bangers 'n beans

    cans baked beans - the more tomatoey the better
  • 500
    low-fat pork, chicken or vegetarian sausages
  • 1
    fresh red chilli - bottled minced chilli or chilli flakes will do as well
  • 15
    olive oil
  • 1
    onion, chopped
  • 400
    can whole peeled and chopped tomatoes (with juice)
  • salt and milled pepper


Heat olive oil in a pan and sauté onion and chilli until soft - about 5 minutes.
Add baked beans, canned tomatoes and sausages (left whole, cut into chunks or remove from casing and roll into balls), and cover.
Simmer gently for about five to eight minutes until sausages are cooked.
Serve with crusty bread and a green salad.
