Cowboy hash

  • 6
    extra-large eggs (or 6 sausages or about 500 g mince)
  • 10

    large onions, coarsely chopped
  • 10
    leaf masala or strong curry powder
  • 850
    beans in tomato sauce
  • salt and black pepper


Boil the eggs until hard, cool slightly and carefully remove the shells. Heat the oil and sauté the onions until tender. Add the masala and stir-fry for another minute. Add the beans, reduce the heat and simmer slowly for 5 minutes. Quarter the eggs (or keep whole, if preferred) and carefully stir into the beans. Reheat without stirring, spoon into hot plates and garnish with fresh parsley sprigs if desired. Serves 6.
