Ingredients (6)

625.00 ml water
300.00 ml sugar
125.00 ml raisins
140.00 g butter
300.00 ml couscous
85.00 ml walnuts — pieces

Method:

Heat the water, sugar and raisins in a saucepan, stirring until the sugar has dissolved. Bring to the boil, cover and reduce the heat to very low. Meanwhile melt the butter in another saucepan and add the couscous. Stir continuously over low heat until the couscous begins to brown, about 20 minutes. Add the walnuts. Increase the heat for the sugar syrup mixture and bring it to a rapid boil. Remove the couscous from the heat and slowly add the sugar syrup while stirring continuously. Return the mixture to the stove and continue stirring over low heat until most of the syrup has been absorbed and the mixture shrinks from the sides of the saucepan. Cover and heat for 5 minutes. Switch off the stove plate and leave the saucepan on the plate for another 5 minutes. Serve hot or with custard or cream.
