Ingredients (6)

30.00 ml oil
2.00 red onions
1.00 yellow pepper
250.00 g couscous
250.00 ml water — boiled
25.00 ml fresh coriander — or parsley, chopped

Method:

Heat oil in a saucepan and fry onions and yellow pepper for 3-5 minutes until soft.
Remove from heat and add couscous. Pour in the boiling water and stir.
Cover pot with lid and allow to stand for 5 minutes.
Stir in coriander and season with salt and freshly ground black pepper.
If making as an accompaniment to a freeze-ahead meal, spoon into a freezer and ovenproof container and allow to cool thoroughly.
Cover with the lid and freeze for up to 3 months.

To serve, defrost and then heat in the oven at 180 ºC for 30 minutes, or until piping hot.
