Ingredients (8)

2 cup couscous
200 g vegetables — roasted
2 cup couscous
3 fresh chillies — chopped
a handful rocket
2 feta cheese
2 Tbs pesto — coriander and pecan nut
olive oil

Method:

Make cous cous.
Arrange cous cous on a plate and layer rocket leaves on top.
Add roasted vegetables and chillies.
Sprinke with chunks of feta cheese, coriander and pecan nut pesto.
Drizzle with olive oil.
