Courgettes with almonds

    cloves garlic, crushed
  • 65
    slivered almonds
  • 700
    courgettes, trimmed
  • salt to taste
  • 5
    black peppercorns, crushed


Heat the oil in a pan and sauté the garlic and almonds over medium heat until golden brown. Remove with a slotted spoon and set aside. Sauté the courgettes in the same pan until tender but still crisp. Sprinkle with a little salt and if necessary add 30 ml (2 T) water to soften the vegetables. Return the almonds and garlic to the pan along with the black peppercorns and heat until warmed through. Serve with meat curries or the mushroom pilau (see recipe) for a vegetarian meal. Serves 6.
