Ingredients (7)

2.00 onion — chopped
50.00 g butter
1.00 kg courgettes — sliced
1.00 Litres stock — vegetable or chicken
croutons — star-shaped
1.00 red pepper — julienned
sage — to garnish

Method:

Heat butter in a large saucepan and cook onions over a gentle heat. Do not allow to brown.
Add courgettes and toss. Add vegetable or chicken stock. Bring to boil and simmer 20 minutes until tender.
Liquidise until smooth or pass through a sieve. Season and allow to cool.
Garnish with croutons, topped with red pepper and sprigs of sage.
