4.00 courgette — grated
30.00 ml flour — cake
salt — pinch
2.00 eggs — extra large, whisked
65.00 ml cream
65.00 ml fresh chillies — 573
2.00 garlic — large cloves, crushed

Method:

Pat the grated courgettes dry with paper towelling. Set aside until needed. Mix the cake flour and salt in a mixing bowl. Add the eggs, cream and olive oil and stir well with a wire whisk until smooth and free of lumps. Add the garlic and courgettes and mix. Heat a little oil in a pan and drop spoonfuls of the mixture into the hot pan. Fry until brown on both sides. Serve hot as a side dish.
Makes 8-10 crumpets.
