Ingredients (12)

90.00 ml canola oil
25.00 ml honey
3.00 eggs
250.00 g courgettes — grated
100.00 ml water — warm
225.00 g flour — cake
225.00 g flour — wholewheat
10.00 g Superbake Instant Yeast
7.00 ml salt
7.00 ml nutmeg — ground
1.00 g lemon — zest only
100.00 g walnuts — chopped

Method:

Beat together the oil, honey, eggs, courgettes and water. Combine the flour, yeast, salt, nutmeg, lemon rind and walnuts. Pour in the oil mixture. Knead to form a dough, adding more water if necessary. Place mixture in a well greased 2 litre loaf tin and allow to rise. Preheat oven to 200ºC and bake for 1 hour. Cool and slice. Spread with margarine.
