Courgette and pasta bake

    pasta shapes, such as bows

    large onion, chopped

    cloves garlic, crushed

    courgettes, coarsely grated

    hot milk

    rounds feta cheese withblack pepper, coarsely crumbled

    extra-;large eggs, whisked
  • salt and coarsely ground black pepper

    grated Cheddar cheese


Cook the pasta according to the instructions until just done, drain and season. Meanwhile heat the oven to 200 °C and lightly butter a medium-sized oven dish. Melt the butter and fry the onion and garlic until soft and flavoursome. Add the grated courgettes and fry for another two minutes. Sprinkle the flour over the contents of the pan and stir to mix. Remove from the heat and gradually stir in the hot milk. Return the pan to the heat and simmer, stirring constantly until the sauce thickens and is cooked through. Remove from the heat, add the feta cheese and cooked pasta and finally stir in the eggs. Season generously and spoon into the prepared dish. Sprinkle the Cheddar cheese on top and bake for about 20 minutes until heated through and the cheese has melted.
