Ingredients (13)

250.00 ml sugar
250.00 ml sherry — medium cream
2.00 cinnamon — stick
2.00 allspice — whole
250.00 g cling peaches — pitted, peeled, quartered
250.00 g apricots — peeled, cored, quartered
250.00 g plums — peeled, pitted and halved
250.00 g grapes — black and green
1.00 lemon — zest only
0.00 garnish — garnish
8.00 fresh mint — sprigs
0.00 cinnamon — stick
0.00 cinnamon — ground

Method:

Place sugar, water, sherry and spices into a large pot and simmer until sugar is dissolved completely.
Bring to the boil, add fruit and poach until tender.
Remove from heat and allow fruit to cool in the liquid.
Spoon fruit in glass bowls and drizzle with remaining syrup.
Garnish with mint sprigs, cinnamon sticks and ground cinnamon.
