Ingredients (14)

1.00 kg tomatoes — peeled, deseeded and chopped
1.00 onion — chopped
2.00 garlic — cloves, finely chopped
1.00 red pepper — seeded and diced
3.00 carrots — sliced
3.00 celery stalks — chopped
175.00 g button mushrooms
175.00 g butter beans — tinned
400.00 g red kidney beans — tinned, drained and rinsed
400.00 g black-eyed beans — soaked
300.00 ml cider
15.00 ml paprika
10.00 ml dried mixed herbs
fresh herbs — to garnish

Method:

Preheat oven to 180 ºC. Put all the ingredients, expect herb garnish, into a large ovenproof dish and stir to mix. Cover with foil and bake in the oven for about 1 1/2hours, until vegetables are cooked and tender, stirring occasionally. Serve with brown rice, rice noodles or couscous. Garnish with the herb sprigs. Serves 4-6.
